Bauregard
This variety of sweet potato grows well in Midwetern states and are known for maturing quickly. They are large, reddish tubers with a moist, deep orange flesh. They offer high yields and are resistant to cracking.
The skin is dark red-orange and the inside is moist and sweet. They are well adapted to regions that are cool or have a short growing season. The average yield is 3-4 pounds per plant. Each slip will grow one plant and form several sweet potatoes.

Evangeline
Evangeline's are known for their unsual sweetness with twice as much sucrose as most other varieties. Their deep orange meat is considered very desirable.
This new variety has only recently been produced by the LSU Agricultural Center. It has been discovered that the plants will not rot in wet soil like most sweet potatoes do, and so they are very tolerant to flooding.
